Hello and welcome to The Travel Palate! I’m Nikole and this is my little blog. I live in Texas with my husband and the youngest of our three children. In just a few short years I’ll be an empty-nester and that impending life transition has brought me here, to the internet of all places, for some soul searching and a lot of distraction.
For the last five years, I’ve taught in the public school system. I’m currently an ESL teacher at the elementary level. I blog when I can. That means this is a hobby for now, but maybe one day I’ll fulfill my wildest dreams and be a full time blogger 😉.
I think it goes without saying that I love food! I’m obsessed with recipes blogs. I could browse the cookbook section of Barnes and Noble all day. I read Cooking Light and Bon Appetit on the airplane. Who does that? Me.
So what kind of food do I like to cook?
Classic comfort foods like beef stew, mashed potatoes, and mac & cheese make a regular appearance on the dinner table. Curry rice from my mom’s native Japan is perfect on cool autumn day. Tacos and enchiladas from my home town along the Mexican border are favorite standbys. I have a passion for dessert. I adore breakfast casseroles. And although I’m not a vegetarian, I love salads and meatless meals made with pasta, lentils or quinoa.
In addition to a little cooking, I love to travel–and it’s addicting! The more places I visit, the more I want to see and explore. Blame it on my mixed heritage, all those anthropology classes I took, or my new found photography obsession, I just don’t feel settled unless I have a trip or two, or three, marked on my calendar. Because I have been so inspired by the many travel bloggers out there, I decided to try my hand at chronicling my own travel experiences. I hope my photography inspires you to travel more and my posts offer you a useful tip or two. Most of all, I hope you come along with me on my next adventure so we can become internet bff’s!
