Welcome to The Travel Palate! I’m Nikole – a wife, a mom of three, and a teacher in love with food and travel!
I started the blog as a way to share quick and easy meals for anyone who doesn’t want to spend a lot of time in the kitchen, but wants to eat and serve home cooked food. My philosophy is get in and get it on the table! I came to this way of thinking from my own little cooking hiatus. As our family’s schedule grew more hectic, I cooked less and less. Instead, we opted for fast food in the car on the way to or from after school activities, or I warmed up a tray of dino-nuggets when my husband had to work late. Eeeek! Cue the mom guilt. Can anyone relate??
Those were the ‘survival years.’ And while the drive-thru helped us get through that crazy phase of life, it wasn’t any way to live for too long. So I learned to cook quick, satisfying meals that relied on pantry staples and didn’t require too much planning (I am NOT a planner).
I grew up eating classic comfort foods like meatloaf and mashed potatoes and lots of stir-fry and dishes like curry rice and gyoza from my mom’s native Japan. Another huge influence on my tastebuds was growing up in the southwest near the Mexico/Texas border. There I learned to love the spicy kick of a fresh pico de gallo and the slow simmered taste of chile Colorado. To me, food is about flavor, variety, and practicality. I hope to share just that with you here on my blog!
Travel is addicting! The more places I visit, the more I want to see and explore. Blame it on my mixed heritage, all those anthropology classes I took, or my new found photography obsession, I just don’t feel settled unless I have a trip or two, or three, marked on my calendar. Because I have been so inspired by the many travel bloggers out there, I decided to try my hand at chronicling my own travel experiences. I hope my photography inspires you to travel more and my posts offer you a useful tip or two. Most of all, I hope you come along with me on my next adventure so we can become internet bff’s!
