Easy Taco Salad Recipe is a quick and flavorful weeknight dinner that the whole family can enjoy! This version is made with iceberg lettuce, ground beef, tomatoes, corn, chipotle peppers, avocado and a creamy salsa-ranch dressing. This recipe won’t disappoint when the Tex-Mex cravings hit, but you’re in the mood for lighter fare.



For the taco meat:

For the dressing:


  1. Heat oil in a skillet over medium heat. Cook onions and garlic until soft, about 5 minutes.
  2. Increase heat to medium high. Crumble ground beef into pan and cook until browned and no longer pink.
  3. Add chipotle pepper puree, cumin, salt and pepper. Stir to combine evenly. Let simmer over low heat for 10 minutes, stirring occasionally.
  4. Divide the lettuce among 4 dishes.
  5. Top lettuce with taco meat, cheese, avocado, corn and tortilla chips.
  6. Drizzle dressing over and serve immediately.

For the dressing:

Mix all ingredients together in a small bowl. Cover leftovers in a tightly fitting container and store in refrigerator for one to two days.
