This Thai inspired coconut milk curry chicken recipe is creamy, full of flavor, and made in one pan A great weeknight dinner ready in 30 minutes!

Ingredients you will need for this 30 minute Coconut Milk Curry:

– coconut oil – chicken breasts – curry powder – salt and pepper – yellow – garlic – ginger – tomato paste – coconut milk

HOW TO MAKE:

1. In a bowl, toss chopped chicken pieces with curry powder, salt & pepper and lightly brown chicken.

2. Melt coconut oil in the same skillet over medium heat. Add onions and cook for 3 to 5 minutes until softened and golden. Add the garlic and ginger, tomato paste, curry powder, cumin, coriander, and ancho chili powder to the skillet and mix to form a thick paste.
