Separate chicken from skin and bones. Chop meat, celery, and onions
In a large bowl, combine sour cream and mayonnaise.
Add chopped chicken, celery, and onion, mixing gently to combine.
Season with salt and pepper.

It's easier to pull the meat from the bones when the chicken is still warm. If time permits, pull the meat from the chicken as soon as you get home from the grocery store. Store meat in a ziptop bag or covered container until ready to use.Rotisserie chickens can vary in size so you may want to adjust the amount of mayo/sour cream accordingly. Most will give you about 4 cups of meat.You don't have to keep it simple! While this recipe is about as simple as it gets, you certainly don't have to limit yourself to this basic recipe. Add grapes, chopped pecans, raisins or apples if that's more your style.Always store chicken salad in the refrigerator or cooler. It will keep for 2-3 days.
