Mix together the seasonings in a small bowl and set aside.
Preheat the air fryer at 360 degrees F for 3 minutes.
Rinse potatoes and pat dry. Cut them in half then place them in a large bowl. Slice shallot and add to the potatoes along with the minced garlic.
Drizzle potato mixture with 2 tablespoons of olive oil, then sprinkle it with half of the seasoning blend. Mix until evenly coated.
Add seasoned potato mixture to the air fryer basket in a single layer. To the same bowl, add the chicken thighs. Drizzle with remaining one tablespoon olive oil and sprinkle with remaining seasoning blend, being sure to coat both sides.
Place a few sprigs of fresh thyme on the potatoes. Place chicken thighs on top of the potatoes with the skin side up.
Air fry at 360 degrees F for 25 to 30 minutes, turning chicken over at the halfway point. Toss potatoes at this time, if needed.
Let chicken rest for a couple minutes before serving. Season with salt and pepper to taste.
Notes
Be sure to check that the internal temperature of the chicken is cooked to 165 degrees F. Check temperature at the thickest part of the thigh touching any bone.
We use the Oxo instant-read thermometer for best results. If additional cooking time is needed, cook in one minute increments until done.
Boneless skinless chicken breasts will cook faster than the potatoes, so you will need to cook them for 10 minutes or so first.
Use a variety of potatoes such as russets, fingerlings, red potatoes, or sweet potatoes.
