Our air fryer is getting a lot of use these days. It' such a great little appliance that can really pull its weight. It turns most dinners into an easy meal that can be put together quickly.

Now, let's talk about the recipe. The beauty of chicken thighs is that they are so flavorful and juicy, and when cooked in the air fryer, they come out with a crispy and crunchy skin that will have you licking your fingers clean.

Plus, chicken thighs are so versatile. You can use your own mix of herbs and spices, a dry rub like my Louisiana rub recipe, or just some kosher salt and black pepper. It's easy to switch up the flavors and keep your taste buds on their toes.

We also love that chicken thighs are cheaper than most cuts of meat so we use the extra cash for a side salad, a crusty loaf of bread, and a side dish of steamed veggies.

Now, let's talk about the potatoes. Everyone loves potatoes, and when they're cooked in the air fryer, they come out perfectly crispy and seasoned to perfection.

The best part about cooking in the air fryer is how easy it is to use. Simply season your chicken thighs and potatoes with your favorite spices, and pop them into the air fryer for a few minutes. That's it! No need to preheat the oven or dirty multiple pots and pans.

Not only is this air fryer chicken thighs and potatoes easy to make, but it's also a great option for those who are health-conscious. By using the air fryer instead of deep-frying, you'll be able to enjoy all the flavors and textures of fried food without the added calories and unhealthy fats.

So what are you waiting for? Grab your air fryer and get ready to enjoy some delicious and healthy chicken thighs and potatoes!

Why you'll love it

  • Air fryer recipes are quicker and create less mess
  • Family friendly and filling
  • Versatile because you can use your favorite seasonings
  • Simple ingredients that are economical
Can you put bone-in chicken thighs in the air fryer?

Absolutely! Bone-in thighs cook up in about 25 minutes and turn out juicy and flavorful when cooked in the air fryer.

Ingredients

Be sure to scroll to the recipe card for precise amounts.

Bone-in, skin-on chicken thighs - we used a package of 4 thighs that weighed about 2 pounds. It's not always possible, but try to choose thighs that are about the same size for even cooking. One thigh in this package was a few ounces bigger than the others, so I had to cook that one a bit longer. If you choose boneless chicken thighs, then you'll reduce the cook time by 2-4 minutes, but that will depend on the size. Always use a meat thermometer to be sure that meat is cooked safely.

Baby gold potatoes - baby potatoes are small just like their name suggests. I love working with this size of potato because they are easy to cut evenly, which is important for getting them to finish cooking at the same time. You can use larger potatoes, just be sure to cut them into equal sizes and that they are not bigger than about an inch and a half.

Olive oil - this is my favorite oil for this recipe, but another type like canola oil will also work.

Shallot - tastes really good with the potatoes, but you can use some yellow onions or red onions instead.

Garlic

Fresh thyme - or use another fresh herb like rosemary or oregano, or sage.

Seasoning blend that includes Italian seasoning, onion powder, garlic powder, paprika, kosher salt, and fresh ground black pepper.

Ingredients to make the recipe

Equipment

  • Cosori Air Fryer
  • Silicone Tongs
  • Meat Thermometer
  • Airtight Containers

Instructions

Mix together the seasonings in a small bowl and set aside.

Preheat the air fryer at 360 degrees F for 3 minutes.

Rinse potatoes and pat dry. Cut them in half then place them in a large bowl. Slice shallot and add to the potatoes along with the minced garlic.

Drizzle potato mixture with 2 tablespoons of olive oil, then sprinkle with half of the seasoning blend. Mix until evenly coated.

Add seasoned potato mixture to the air fryer basket in a single layer. To the same bowl, add the chicken thighs. Drizzle with remaining one tablespoon olive oil and sprinkle with remaining seasoning blend, being sure to coat both sides.

Place a few sprigs of fresh thyme on the potatoes. Place chicken thighs on top of the potatoes with the skin side up.

Air fry at 360 degrees F for 25 to 30 minutes, turning chicken over at the halfway point. Toss potatoes at this time, if needed.

Kitchen tips

Be sure to check that the internal temperature of the chicken is cooked to 165 degrees F. Check temperature at the thickest part of the thigh touching any bone. We use the Oxo instant-read thermometer for best results.

If additional cooking time is needed, cook in one minute increments until done.

Boneless skinless chicken breasts will cook faster than the potatoes, so you will need to cook them for 10 minutes or so first.

Use a variety of potatoes such as russets, fingerlings, red potatoes, or sweet potatoes.

How to store and reheat

Store leftovers in an airtight container in the refrigerator for 3-4 days.

Freeze for up to three months in freezer safe containers. Thaw in refrigerator before reheating.

Reheat in at 300 degrees F in the oven or air fryer until hot, about five or six minutes. To keep the food from drying out, cover or wrap in foil.
