Mix stir fry sauce ingredients together in a small bowl or mason jar.
Add cut chicken pieces and stir fry sauce to a gallon sized ziplock bag or large bowl. Mix well to be sure all chicken pieces are coated. Marinate in the refrigerator for at least 15 minutes and up to an hour or two.
While the chicken marinates, prepare vegetables by washing, drying, and cutting. Be sure you thoroughly wash any utensils that may have come in contact with the raw chicken before using them to prep veggies. Toss veggies in a large bowl and sprinkle with salt and black pepper.
Remove chicken from the marinade and place the pieces in the the air fryer basket that's been coated with non-stick cooking spray. Discard bag and marinade. For best results, place them in a single layer.
Add the veggies to the basket with the chicken.
Air fry at 380 degrees F about 9 minutes total time, tossing at the halfway mark. Stir fry is done when chicken has reached in internal temperature of 165 degrees F.
Drizzle with extra stir fry sauce or soy sauce before serving.
Notes
There's no need to pre-heat the air fryer before cooking this recipe.
Avocado oil or olive oil spray are good options.
A good quality teriyaki sauce can be substituted for the stir fry sauce.
