    Air fryer stir fry is a delicious, healthy recipe that's perfect for busy weeknights. This simple recipe is full of fresh vegetables and bite-size pieces of chicken breast that's been marinated in a homemade, 3 ingredient stir fry sauce.

    We love using our air frying because it cooks our dinners quickly and easily. Air fryers use less oil so food doesn't become greasy or overly fatty.

    This chicken stir fry is an easy dinner that takes little effort on your part. You can set and forget! Once you get the ingredients cooking, you only need to stir them once- just let the air fryer do most of the work for you!

    Stir frying in an air fryer is healthier than traditional deep-frying methods. We all love eating out at Chinese restaurants, but Plus it's loaded with ingredients like bell pepper slices, mushrooms, and broccoli, which we all know are good for us!

    If you're looking for a quick and easy main dish look no further than your trusty air fryer. With just a few simple ingredients and a homemade stir fry sauce, you can have a flavorful and healthy meal on the table in no time.

    Ingredients

    Skinless chicken breasts - use skinless chicken thighs if that's your preference.

    3 ingredient stir fry sauce - this is my simple recipe that is made up of hoisin sauce, soy sauce, and sesame oil. It's used as a marinade for the chicken.

    Red pepper flakes - I like to add just a touch of spice. You can use as much or as little as you like. Chili powder also tastes great and has a milder, smokier flavor. Cayenne pepper is another option.

    Fresh garlic

    Onion

    Mushrooms - I used white button mushrooms, but I like baby Bellas as well.

    Bell pepper - I like red bell pepper, but any color like green, yellow or orange will also work just as well.

    Broccoli florets- this is a favorite around my house and it's also a great one to add to the air fryer because it doesn't get soggy.

    Other stir fry veggies to try: Brussels sprouts, carrots, cabbage (green or Napa) bok choy, and cubed sweet potatoes.

    Equipment

    • Cosori Air Fryer (Basket style)
    • Tongs
    • Bowls
    • Airtight containers

    Instructions

    Mix stir fry sauce ingredients together in a small bowl or mason jar. Add red pepper flakes along with the chopped ginger and garlic.

    Add cut chicken pieces and stir fry sauce to a gallon sized ziplock bag or large bowl. Mix well to be sure all chicken pieces are coated. Marinate in the refrigerator for at least 15 minutes and up to an hour or two.

    While the chicken marinates, prepare vegetables by washing, drying, and cutting. Be sure you thoroughly wash any utensils that may have come in contact with the raw chicken before using them to prep veggies. Toss veggies in a large bowl and sprinkle with salt and black pepper.

    Remove chicken from the marinade and place the pieces in the the air fryer basket that's been coated with non-stick cooking spray. Discard bag and marinade. For best results, place them in a single layer.

    Add the veggies to the basket with the chicken.

    Air fry at 380 degrees F about 9 minutes total time, tossing at the halfway mark. Stir fry is done when chicken has reached in internal temperature of 165 degrees F.

    Drizzle with extra stir fry sauce before serving.

    Kitchen tips

    There's no need to pre-heat the air fryer before cooking this recipe.

    Avocado oil or olive oil spray are good options.

    A good quality teriyaki sauce can be substituted for the stir fry sauce.

    Freeze in freezer safe containers for up to three months.

    Thaw overnight in the refrigerator.

    How to reheat

    The best way to reheat is in the microwave microwave: cover leftovers and place in a microwave safe dish and cook at 50 % power until heated through. Overcooking will lead to tough chicken.

    Air Fryer and oven: for best results, wrap leftovers in foil and heat at 300 degrees until heated through.

    How to serve

    Try with white rice, brown rice, cauliflower rice, or serve it as-is to keep it low carb.

    Basmati Rice and Singapore fried rice is an easy side dish option as well.

    Ingredients
     
     

    Stir Fry Sauce

    • ¼ Hoisin sauce
    • 2 tablespoon soy sauce
    • 2 tablespoon sesame oil

    • 2 garlic cloves chopped finely
    • 1 teaspoon fresh or frozen ginger chopped finely
