Easy Chicken Dorito Casserole

Easy Chicken Dorito Casserole is a cheesy, creamy dinner that is sure to quickly become a family favorite. This meal is full of crunchy Doritos, layers of cheese and chicken so there's something everyone will enjoy. Ready in about 30 minutes!

If busy weeknights get you down, you have to try this easy dinner recipe that's made with simple ingredients like cream of chicken soup, cooked chicken and cheddar cheese. This delicious recipe will bring life back to your dinner table and the entire family can enjoy it.

We love easy dinners and you know that Tex Mex dinners are my specialty! We just can't get enough of our favorite flavors especially when they come together in a comfort food casserole like this one.

Ingredients

Doritos - I used nacho cheese flavor, but Cool Ranch Doritos are a great choice. I used just one 9.25 ounce bag of Doritos.

Chicken - I used rotisserie chicken for simplicity. You can use canned chicken, or cook your own. You can use just boneless, skinless chicken breasts, chicken thighs, or a combination. I diced my chicken but shredded chicken also works.

Salsa verde - I used Herdez brand. You can use a green enchilada sauce or green salsa instead. Rotel, which is canned diced tomatoes and green chiles, is also a good substitute.

Cream cheese - I used a full fat version for the ultimate creamy texture.

Cream of chicken soup - this is a great time saver so we don't have to make a béchamel. Cream of mushroom soup will also work.

Taco seasoning - I always use my homemade taco seasoning. Store bought is fine too.

Sour cream - another creamy layer that gives the dish a little tang.

Shredded cheese - I like to use a combination of good melting cheeses. Some good choices are cheddar cheese, Monterey Jack, Chihuahua, and mozzarella. Mexican blend or a taco blend works too.

Optional favorite taco toppings: more sour cream. sliced green onions or avocado, black olives, sliced jalapeños, guacamole, salsa, and cilantro.

Ingredients to make the recipe.

Directions

1) Preheat your oven to 350 degrees F. Spray a 9x13 inch casserole or baking dish with non-stick cooking spray.

2) In a large bowl combine cooked chicken, salsa verde, softened cream cheese, cream of chicken soup, and taco seasoning. Mix well to combine.

3) Crush Dorito chips (I lightly smashed them in the bag before I opened it). Layer half of the crushed Doritos in the bottom of the dish. 

4) Layer half the chicken mixture over the Doritos, then spread the sour cream over the chicken. Sprinkle one cup of cheese over the sour cream then add the rest of the crushed Doritos. Finish by layering the remaining cup of cheese.

5) Bake in a preheated oven for about 25 minutes, or until cheese is melted and sides of the Doritos casserole are bubbling hot. Serve with favorite toppings.

Variations

  • Add a can of Rotel (diced tomatoes and green chiles).
  • Add a can of black beans (rinsed and drained)
  • Add a can of corn (drained) or one cup of frozen corn.
  • ​Cook a pound of ground beef and use that in place of the cooked chicken.

Tips

  • Store any leftover casserole in an airtight container in the refrigerator for up to 3-4 days. Reheat, covered, in the microwave on reduced power until hot for best results.
  • If you don't have taco seasoning on hand, try a combination of chili powder, onion powder, garlic powder, dried oregano, and a pinch of cayenne pepper.

Ingredients
 
 

  • 3 cups cooked chicken
  • 1 cup salsa verde
  • 8 oz cream cheese softened
  • 10.5 oz cream of chicken soup
  • 2-3 tablespoon taco seasoning homemade or store bought
  • 9.25 oz Doritos (nacho cheese) lightly crushed
  • 1 cup sour cream
  • 2 cups cheddar cheese shredded
  • any favorite toppings

Instructions
