​Turkey Salisbury Steak with Mushroom Gravy

This Turkey Salisbury Steak makes a quick weeknight dinner your entire family will love. This classic comfort food is a healthy upgrade from the traditional version, but it doesn't sacrifice any of the flavor you've come to love.

Ever thought about making the iconic Salisbury steak recipe with ground turkey instead of ground beef? If the answer is yes, then you'll want to give this delicious recipe a try.

Our family loves classic meals like homemade Salisbury steak. Lately we've been making some of those all time great recipes with ground turkey and getting tasty results. If you haven't checked out my Turkey Chili or my Ground Turkey Sliders, what are you waiting for?

You'll love this turkey Salisbury steak recipe because you'll be able to get it cooked up and ready to serve in less than an hour. I hope you like it enough to add to your easy dinner recipes rotation.

Ingredients

This is an overview of how to make turkey Salisbury steak. Please see the printable recipe card for exact amounts.

For the turkey patties:

​Oil - olive oil, canola oil, vegetable oil to cook the patties. Cooking spray can be subbed, but you might not get as good of a crust on the patties.

Ground turkey - I use 93% lean ground turkey for just about all my recipes. 

Ketchup - tomato paste can be subbed

Dijon mustard - spicy brown mustard, coarse mustard, yellow mustard will all work.

Worcestershire sauce 

Panko breadcrumbs - dry breadcrumbs, seasoned bread crumbs will also work.

Egg - as a binder and to maintain moisture.

​Garlic powder, kosher salt, black pepper.

For the mushroom onion gravy:

Butter

Onion - I prefer yellow onion, but white onion works too.

​Mushrooms - I used button mushrooms, but baby Bellas are also a good choice.

Flour - unbleached all purpose flour is our personal fave.

Beef broth - I like low sodium version so I can make the gravy to taste. Chicken broth or vegetable broth can be subbed, but the flavor and color of the gravy will be much lighter.

Worcestershire sauce

Ketchup - tomato paste can also work.

Salt and black pepper - to taste

Optional: Heavy cream or half and half if you want a creamy gravy. Adjust to taste.

How to make turkey salisbury steak

Combine ground turkey, ketchup, dijon mustard, Worcestershire sauce, panko bread crumbs, garlic powder, salt and pepper in a large bowl. Gently combine the meat mixture with your hands (don't overwork). Form into 4 equal oval patties. I like to make little indentions in the patties (a tip from Ree Drummond).

In a large skillet, heat a tablespoon of oil over medium-high heat. When hot, add the patties and cook for about 2-3 minutes per side, or until nicely browned. Reduce the heat to medium heat and remove the patties to a plate while you make the gravy. There is no need to wipe the pan unless you have a lot of extra grease (not likely with turkey).

To the same pan, melt the butter. Add the onions and mushrooms and cook, stirring often for about 5 -7 minutes, or until most of the moisture has been released. Sprinkle the flour over the vegetables, stir and cook for one minute.

Add the beef broth, Worcestershire sauce, ketchup, and salt and pepper. Stir while the mixture comes to a simmer. Add the patties to the gravy, cover the pan, and cook for about 10 minutes. Flip the patties over and cook uncovered for another 5 to 10 minutes or until the internal temperature of the patties reach 165 degrees F and the gravy is thickened to preference. Season with more salt and pepper to taste.

​Tips

To keep this as close to the classic Salisbury steak recipe, serve over a mound of creamy mashed potatoes with plenty of gravy! Egg noodles, white or brown rice are great too.

Keep your meal low carb and serve as is or with some riced cauliflower or cauliflower mash. 

Use an instant-read meat thermometer to be sure patties are cooked to a safe internal temperature.

A kitchen scale can help measure turkey steaks so you'll get equal portions.

Want the beef version? Switch out the ground turkey for lean ground beef. 

Fresh thyme added to the gravy is a nice touch.

How to store

Store leftovers tightly covered in the refrigerator or in an airtight container for 3 or 4 days. 

Reheat in the microwave at 50% power until heated through.

Freeze in freezer safe containers for up to three months. Thaw overnight in the refrigerator. Reheat.

Ingredients
 
 

For the turkey patties:

  • 1 lb ground turkey
  • 1 tablespoon ketchup
  • 1 teaspoon dijon mustard
  • 2 teaspoon Worcestershire sauce
  • ⅓ cup panko bread crumbs

  • 1-2 tablespoon oil

For the mushroom gravy:

  • 8 oz white button mushrooms sliced ¼ inch thick
  • 2 tablespoon flour all purpose
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon kosher salt or to taste will depend on how salty broth is
  • ½ teaspoon black pepper or to taste
  • fresh thyme sprigs optional
  • ¼ cup heavy cream or half and half optional

    When do you add the optional cream?

      Hi Tracy, I would add the cream at the very end over medium to low heat. I would also cut the beef broth back a quarter cup as well. Hope that helps!
