Blueberry Lemon Overnight Oats are a perfect way to begin the day with a healthy dose of fiber before you head out to work.

Blueberries are rich in antioxidants and lemon juice has been shown to be an excellent source of vitamin C, which is needed for immune system support.

This oatmeal taste best when they're made the night before because the oats will absorb all of the delicious flavors overnight.

They can help start your morning off on a positive note by providing high-quality carbohydrates that will give you energy while also satisfying your sweet tooth.

You can easily put this overnight oatmeal together the night before and enjoy it when you wake up, refreshed, and ready for your day!

Super easy - there is no recipe easier than overnight oats. You really just throw your ingredients in a jar, put them in the fridge, and voila!

Healthy - oats have many health benefits! They have many vitamins and minerals and are very filling and contain no saturated fat.

Make-ahead - this is the perfect breakfast for busy mornings on the go. This is truly a grab-and-go breakfast that can be part of your meal prep menu.

Kid-friendly - kids love oatmeal and they will absolutely love to be able to "make" their own breakfast each morning by just grabbing it out of the fridge.

Versatile - you can pack overnight oats full of all kinds of yummy ingredients like various fruits, nuts, and flavorings.

Key ingredients

Lemon yogurt - lemon yogurt is essential for your overnight blueberry lemon overnight oats but it gives you tons of flavor and creaminess.

Lemon zest - the lemon zest will give your oats an incredible burst of lemon flavor.

Milk - you can use regular milk or any plant-based milk such as soy, un sweetened almond milk, cashew, or coconut.

Maple syrup - gives your overnight oats its sweetness. You could also substitute this for honey or agave syrup if that is what you'd prefer.

Old fashioned rolled oats - this is the main star of this recipe. You cannot have overnight oats without the oats. Oats are great for a fiber-packed breakfast.

Chia seeds - you can leave them out if you don't like them, but they add even more fiber and substance to your overnight oats.

Fresh blueberries - blueberries taste absolutely delicious in combination with lemon. However, if you are not a fan of blueberries, feel free to substitute them for another fruit that you'd prefer.

Instructions

Always start with clean hands, work area, and kitchen utensils.

Step One: Mix the yogurt, lemon zest, milk, chia seeds, and maple syrup together in a bowl until combined. Next, add the oats and stir well.

Step Two: Gently stir in the blueberries. Spoon the oatmeal mixture into 2 small cups. Cover and chill for at least 4 hours or overnight.

Step Three: If all the milk hasn’t been absorbed, give it a stir before serving. Drizzle with honey or maple syrup and top with a few fresh berries and lemon zest.

Top tips

  • Using more or fewer oats in the recipe will yield a thinner or thicker finished product. However, I don’t recommend using less than ½ cup or more than one cup.
  • Make sure to use old-fashioned oats, not steel cut, for best results.
  • Greek yogurt is may favorite for this recipe. Chobani and Oui each have a great-tasting lemon yogurt.
  • Use maple syrup or agave syrup in place of the honey if you prefer.
  • Overnight oats are typically eaten cold and taste great this way.
  • These glass jars will work perfectly.

How to serve blueberry lemon overnight oats

Eat for a yummy after-workout snack.

You kids will love to grab their own breakfast from the fridge before school and could even enjoy it as an after-school snack as well.

Serve your oats as a side to pair with a large breakfast such as bacon and eggs.

Top your overnight oats with some finely chopped nuts like almonds, walnuts or pecans for an extra crunch and added nutrition.

Variations

Experiment with different yogurt flavors. There are endless varieties to choose from. If you choose to use unsweetened plain greek yogurt, just keep in mind that it will not be as sweet.

Add a small amount of fresh lemon juice, almond, or vanilla extract for added flavor.

Choose gluten free oats if you cannot have gluten.

Try dairy free yogurt alternatives if dairy isn't tolerated.

Storage

Cover and store in the refrigerator for 3 or 4 days.

Freezing isn't recommended.

Are overnight oats fattening?

No, overnight oats are not typically fattening. If you use whole milk or whole fat yogurt, they could be a bit more fattening, but they are still very healthy.

Is it healthy to eat overnight oats every morning?

Yes, you can eat overnight oats every morning for breakfast as part of a healthy diet. Getting a good amount of carbs each day will give you more energy and elevate your mood.

Can you put fruit in overnight oats the night before?

Yes, you can! Adding all of your ingredients into your overnight oats jar will allow all of the flavors to incorporate and become stronger. However, if you want your fruit to be less soft, you can wait until the morning to stir it in.

Do you have to use a glass jar for overnight oats?

No, you don't have to! I prefer using a glass mason jar for my overnight breakfast oats, but you can definitely use a plastic container if that is what you prefer.

  • 1 teaspoon lemon zest; about 1 lemon
  • ½ cup milk; regular almond, or oat
  • 2 teaspoon chia seeds
  • 2 teaspoon maple syrup or honey plus more for drizzling
  • ⅔ cup old fashioned oats
  • ½ cup blueberries plus a few more to place on top
