  • Ripe mango
  • Red bell pepper (or yellow pepper for a sweeter twist)
  • Red onion
  • Jalapeño pepper
  • Fresh lime juice
  • Pinch of sea salt
  • Chopped cilantro to taste

Instructions

Prepare the ingredients - Using a sharp knife, dice the fresh mango, pineapple, red bell pepper, red onion, and jalapeño pepper on a cutting board.

  • 3 cups pineapple fresh, diced
  • 1 mango peeled and diced
  • 1 red bell pepper diced
  • ¼ cup red onion finely diced
  • 1 jalapeño finely diced
  • 3 tablespoon lime juice fresh
  • ¼ teaspoon sea salt
  • 1-2 tablespoon cilantro leaves finely chopped, optional

  • Add diced pineapple, mango, red bell pepper, red onion, and jalapeño to a large bowl. Pour over freshly squeezed lime juice and toss to coat. Sprinkle sea salt and cilantro leaves, toss again. Chill for 30 minutes before serving, if desired.
