    It's quick and easy to make! This easy coconut rice recipe is made in about 20 minutes in the instant pot. Just add ingredients and go!

    Made with easy to find ingredients like jasmine rice, coconut milk, lime, and cilantro.

    It's a nice break from plain white basmati or brown rice. This Thai inspired coconut jasmine rice is fragrant and creamy! It pairs well with this Coconut Milk Curry Chicken or with this Roasted Broccoli if you want to keep your lunch or dinner vegetarian.

    Ingredients

    Be sure to use full fat coconut for best results. Don't forget to add fresh lime and cilantro!

    Directions

    Rinse rice well under cold running water in a mesh strainer until water is clear. Or place rice in a bowl and wash rice, adding fresh water until mostly clear.

    Add rice, coconut milk, water, sugar, and salt to instant pot. Stir. Close and lock lid. Cook with high pressure for 3 minutes. Use natural release for 7-10 minutes. Carefully release remaining pressure. Open lid, fluff with a fork. Top with chopped cilantro, lime juice, and sesame seeds.

    • Use full fat coconut milk for best results.
    • Don't dump and go! Be sure to stir the ingredients before cooking in the pressure cooker.

    Storage

    Store leftovers tightly covered in the refrigerator for up to 4 days. Rice will dry out, so you may want to add a splash of water when reheating. To reheat, cover a microwave safe dish and heat to desired temperature.

    • 1½ cups jasmine rice
    • 14 oz. coconut milk full fat, canned
    • ½ cup water
    • 1 teaspoon sugar
    • ¼ teaspoon salt kosher

    For Serving

    • Cut up lime wedges
    • Chopped cilantro leaves
    • Toasted sesame seeds

    Instructions
     

    • Rinse rice well with water.

      I tripled the recipe and got a burn notice before it came to pressure. It was definitely burning when I opened the lid. I added two cups of water and started the process over and it worked. Although I do think the rice was over cooked, more mushy by the end from the additional cook time. Still had a decent flavor though.

      Burn Notice. I doubled the recipe but I can’t say it’s the recipe because I have fought this issue repeatedly once I switched from the 6 Qt to the 8 Qt. Definitely would not buy the 8 Qt again. Never had the issue with the smaller one.

      If I triple the recipe, I'd the cook time still only 3 minutes?

        You should be able to double or triple the recipe without changing the times, but I might add a minute to the cook time and let it release for 10-15 minutes. The pot will take longer to build pressure and the rice is cooking during that time. Just be sure not to fill past the line indicated on the insert.

      Followed directions
      Burn notice before it came to pressure ruined it
      Use instant pot all the time to make rice
      Will not make again

        I'm so sorry this happened Rose! You sound like an experienced instant pot user, so you probably know your pot well. However, if you got a burn notice before the pot was at pressure, then there shouldn't have been much heat in the pot and you should be able to start the cooking process over. A burn notice usually means the rice to liquid ratio is off, so perhaps something happened there.
